It's COST IN USE that really matters now!

As the costs of running any business today rise inexorably it is more important than ever to consider the actual ‘cost in use’ of any product or ingredient used. As we are all involved in feeding the general public, quality has to be paramount. It is foolish to take short cuts in the food chain. However, large global and national brands will often charge ‘top dollar’ to support their massively expensive marketing campaigns which are designed to persuade us that their products are the best. In truth many ‘Own Label’ or Regional Branded products are manufactured to a similarly high standard yet give far greater value for your money (as shown below). With products such as Gravy and Curry Mixes, it is well worth reading the labels properly and comparing yields per pack. With some other products comparisons may not be so clear cut.

Our ‘Pulse’ Batter Flour looks to be costing not far off double the cost of wheat-based batters. However, when you take into account that Pulse absorbs up to 50% less oil or fat than wheat batters (analysis by Foodtest Laboratories Ltd.) and that it makes, kg. for kg. up to one third more volume of liquid batter, it is costing only fractions of a penny more per fish coating. On top of all this it is of course Gluten-Free! This makes offering healthy, gluten-free Fish, Chips ‘n Mushy Peas all the time a viable option that will appeal to many more Customers as some shops are already discovering.

Cooking Mushy Peas is another area where it is so easy to increase your profits. Why do people continue to buy cans of peas when it is so easy and convenient to use a Hawkins ‘Big Boy’ Cooker to do the job properly?

A 4oz. portion prepared from a bag of Supergreens will cost just 3.5 pence yet from a can 15 pence! A 7oz, portion from dried will cost 6 pence and from a can an unbelievable 26 pence - no contest methinks!

Frying media is another area where we can be carried away with seductive advertising and lose sight of what the actual costs in use are.

As the table below clearly demonstrates the cheapest oil litre for litre is a good 40% more durable under heat than the other more ‘glamorous’ oils!

When all oils break down their ‘healthy’ characteristics are changed into very unhealthy transaturates. It is the saturate content of palm that gives it much more durability over other oils - and it is often overlooked that there are good saturates as well as the not so good!
